    I have a lunch date with a friend tomorrow at PF Chang's. Will you help me pick a meal that sticks close to the no-carb challenge (keeping in mind I eat vegan)? Below are my options. Thanks!

  • Oh of course, use a different herb. Basil pesto sounds much yummier! I'll do that instead. Thanks Angela! So glad I have your great brain to pick! :)

    You are welcome to use basil and make a pesto from basil. If you don't want to use the herb, be sure to still somehow add the oil from the pesto recipe to hit the desired calorie load.

  • Hi Angela,

    Another recipe question - can the sweet potato w/cilantro pesto be made without the cilantro pesto? Or does that take away from the nutrition needed? I detest cilantro.

  • Hi Angela, will Enger-G Egg Replacer work in place of the eggs for the Carrot Scallion Pancakes? I've not used it for cooking, only for baking.

  • Hi Christine,

     

    The goal is to focus on healthy proteins and fats - the recipes and meal plan that I created are focused on healthy oils, avocado and nuts and some seafood. Eggs, chicken, seafood... are all suitable substitutions. I do caution against overly focusing on red meat and chicken... plant based eating is still our focus here with some of the healthiest and leanest fat and protein choices like avocado and seafood.
